Spontaneous malolactic fermentation allows for a balancing of real zesty fruit, harvested in September to keep it full of zing. Pecorino can slip into unctuous spice a little too quickly, even with the sea breezes and the altitude of the vineyards. But it is a cracking wine, really lovely harmonious white, perfect partner to fish and cold meats. We will be bringing the Collecivetta which is their other Pecorino where they let the spice sing, with a good citrus balance of course, but that takes us into grills and game I think and we’re not there yet with this Pecorino. Which is all to the good, because we love its white currant fruit aromas and its beautiful refreshment. Lovely label too.

So another Bianca Trading producer and of course it’s another superb family operation who’ve been doing the business for so many generations. And they live in the foothills of theAbruzziand its all about provenance and blah de blah de blah. You know it will get like that soon, we’ll be crying out for wines brewed in enormous vats in South Eastern Australia, get some oak and fruit in their boys, those Brits they just love it, pass us a tinnie would yer’. Yes, there is great Aussie wine, but we never see it AND it is from far far away and we speak Italian and guess what Pasetti have been doing this for years. They’ve slowly found the vineyards in the foothills of the wild Gran Sasso are the best, valley of Trino and Pescara. They do care, about all they do. They have changed their labelling, it looks so super stylish now, but the wine also they have continued to improve. The Abruzzi has the climate and the grapes to hit the heights and it can do gorgeous medium priced gear.

Domenico Pasetti is president of the local association of agriculturalists, so he’s interested, as you would be living there, in all forms of agriculture, the land, its produce and he makes a very good case for paying proper prices for real schmutter. So stump up the shreddies. Laura his wife fronts up the stands at the trade shows and shouts at us for more cash. We try, put come on, times is hard, can we have just a little more wine……..
